When were on our health kick or putting our weight loss into over drive...all we have is chicken, turkey, and veggies as far as the eye can see. OVER IT.
(Well, for dinners. Breakfast and lunch has healthy carbs/fruits/dairy incorporated)
I figured out a way to trick ourselves into enjoying ground turkey again (for the time being).
MEATBALLS! All sorts of different types of meatballs!
Today I'm sharing my two favorites so far!
The {not really} Fried Artichoke Turkey Meatball
obviously without the pasta you can do some Quinoa, whole wheat pasta, orzo, just on a bed of cooked spinach, whatever tickles your fancy.
Last night I made...
Meatballs
What you'll need:
-ground turkey
-garlic
-onion
-smoked paprika
-Italian bread crumbs
-basil/rosemary
-Finely chop garlic/onion/basil.
-Mix all ingredient together.
-Form into balls
-Cook on medium-high heat turning frequently to keep roundish shape.
-After all sides are browned, turn down to medium and cover for about 20 minutes or until cooked through,
Ghetto-All-I-Had-In-My-Fridge-Sauce
-Cherry toms
-garlic
-onion
-extra virg olive oil
-basil
-salt/pep
-Simmer everything together until saucy! haha really that's it! Just use about 1-2tbs evoo in the "sauce" to thin it out. You may need to pop and smash the tomatoes in the pan after a little bit to get the sauce going faster :)
To plate...
